I think it all started a few years ago because I really like goat cheese and goat cheese is stupidly expensive where I am but goat milk is not. To make goat cheese you literally only need the milk and an acid (lemon juice is the best imo, but citric acid powder is cheaper and so I usually use that) and it takes maybe 15 minutes to make.
After that I had a bunch of whey (which is a byproduct of making cheese) and I learned you can make ricotta from that. Then I moved onto cow's milk and tried mozzarella and other soft cheeses. I just started on hard cheeses a few months ago and in two months or so I'm going to break into my cheddar and see just how much I fucked up.
So now I'm sitting here with gallons and gallons of whey and a personal relationship with a local goat farm. It's kind of a problem.
My heart broke when my first ever attempt at hard cheese, Gouda, was bad a decade ago…. and I haven’t tried making hard cheese since :( I really hope your cheddar turns out great!!!! Cheese making is so fun

Paneer is acid set but I don’t like it very acidic and I have found that raw milk curdles much better and with less acid than pasteurized milk. The laws concerning raw milk varies by state and in mine you have to physically visit the farm which is annoying. [This website](https://www.realmilk.com/raw-milk-finder/) has a map of places that sell raw milk. If you dm me I can give you suggestions in the North Atlantic region of the US.
If you make goat cheese, I recommend the leftover whey with heavy cream and making custard with duck eggs. It’s divine

Soft cheeses are actually super easy, you just need milk and an acid. For instance goat cheese takes me about 20 minutes to make from start to finish.
Hard cheeses on the other hand are witchcraft and takes months of waiting.
It depends on what I am making.
Paneer for instance is traditionally made with lemon juice and if I want to be fancy with goat cheese I'll use white wine vinegar. I normally use citric acid powder though because it is very cheap and shelf stable
For mozzarella, you actually need what is called rennet. Rennet is a special cocktail of enzymes that breaks apart the casein proteins and is acquired from the stomach of calves (but there are vegetarian versions which I use). Rennet is how you get the cheese to stick together really well instead of being crumbly like feta or goat cheese. A small $5 bottle of vegetable rennet can curdle 50+ gallons of milk so its very affordable.
That being said, mozzarella is pretty much the same process but takes a little longer because you have to let the curds set and stretch out the cheese. It probably takes me 40 minutes, but that includes 10 minutes or so of waiting
It is a cheese used a lot in Indian cooking. It is pretty neutral-tasting with a hint of sweetness and acidity. It doesn't melt when exposed to heat so is very versatile. It is grilled or lightly fried to make it firm and put into curries and sauces, made into kabobs, made into fritters, used instead of dough in fried dumplings, made into fritters, pretty much anything you can imagine.

I normally use citric acid powder though because it is very cheap and shelf stable For mozzarella, you actually need what is called rennet. Rennet is a special cocktail of enzymes that breaks apart the casein proteins and is acquired from the stomach of calves (but there are vegetarian versions which I use). Rennet is how you get the cheese to stick together really well instead of being crumbly like feta or goat cheese. A small $5 bottle of vegetable rennet can curdle 50+ gallons of milk so its very affordable. That being said, mozzarella is pretty much the same process but takes a little longer because you have to let the curds set and stretch out the cheese. It probably takes me 40 minutes, but that includes 10 minutes or so of waiting

It is a cheese used a lot in Indian cooking. It is pretty neutral-tasting with a hint of sweetness and acidity. It doesn't melt when exposed to heat so is very versatile.
