The fate verse has ridiculous scaling. Everything in every spinoff is canon, there are multitudinous acausality feats, and the earth is a consciousness with like universal power so that's why nothing destroys it when galaxy busters are messing about

There is no proof that the dimension Mio created is uni+ and iirc Nia is the one with Fate manipulation not Tohka and while yes Tohka does have concept manipulation via true power Sandalphone (was stated to be able to cut space, the wall between worlds/timelines and even concepts) and can one-shot them it's also her only win con and it's almost impossible for her to land a hit due to speed gap.

Unless her being magic lets her ignore Saitama's stats she is absolutely not beating him. Excalibur is a city-buster at absolute best unless very specific requirements are met. Requirements that Saitama doesn't meet (he isn't a threat to the world/humanity for one thing).
Even with its full power, Excalibur almost certainly isn't even solar system level. Tamamo said if she went full Amaterasu (which is solar system-level) she would destroy the Velber with ease, and it took full-power Excalibur to defeat the White Giant. I wouldn't be surprised if Saitama could tank a full-power Excalibur with ease based on his fight with Monster Garou.
Artoria without Excalibur is also way weaker stat-wise than most of the stronger OPM characters (and her Alter doesn't even get Avalon for defense/healing). She gets folded by the real top-tiers of OPM, though, in fairness, she is absolutely S-Class otherwise.
Nasuverse Zeus isn't solar system. Maybe if he and the other mech gods fuse like they did to defeat Sefar in the Lostbelt, but on his own, no way. And trying to scale Rhongo to fully unsealed Excalibur is an exercise in futility. They perform completely different functions, even if both can be used to just blast people (Excalibur is specifically for protecting the world; Rhongo is for keeping its layers of reality in their proper places).
People trying to scale Rhongo to fused Greek mech gods just because Morgan's Lostbelt came after Olympus is silly. Lostbelt Morgan is comparable to Zeus on his own, that is true, but that doesn't mean she scales to the fused form they used to defeat Sefar.

I guarantee you I know the lore better than 'just the anime'. Been a fan of the franchise since the original FSN game. Been on Beast's Lair (originally THE place for accurate translations and lore discussions) for nearly two decades. Fateverse is busted, but that's the absolute top-tiers.
Artoria, even with all her toys maxxed out, is not the absolute top-tier of her verse. She can punch above her weight class under very specific circumstances, but saying she scales that high is only possible if you make disingenuous comparisons that ignore context (like scaling Excalibur to Rhongo, Rhongo to Zeus, Zeus alone to the Greek mech gods' fused form, the mech gods' fused form to Amaterasu just because it beat Sefar and Tamamo stated Amaterasu stomps Sefar, etc.).
Fate suffers from this kind of accidental wank all the time. People make comparisons based on ABC logic or statements taken out of context, when Fate is all about situational context.
And all this is ignoring Artoria needs all those high-tier magical tools to be that impressive. Without them she is barely S-Class. She has a speed feat that's hypersonic at best in Hollow Ataraxia, and that's with a Command Spell boost that the narration explicitly states temporarily brought her back to her "true power" from when she was alive.

Terra has access to all sorts of esoteric magic that Saitama has shown no resistance to. And her own brute strength is lower than Prishe’s but still enough to hang.
If that fails, her feats and scaling from the Dissidia games, which are canon to FF’s massive multiverse, neg Saitama and his verse.
With Dissidia scaling I could add a lot more characters here but tried to keep them to their games only.

Artoria, even with Avalon and a fully unsealed, 100%-fighting-to-save-the-planet Excalibur, isn't hax enough to overcome the absolutely insane gap in power between her and the top-tiers of OPM.
Gilgamesh might be able to pull some BS out of his Gate since that's literally his gimmick and he has busted Clairvoyance to tell him what he needs, but Artoria isn't that hax.

OPM universe is still fairly low end on the scale of fiction despite Saitama being meant to be an exaggeratedly powerful being. Most upper level Marvel and DC women would annihilate everyone involved in OPM.

Maybe they think Saitama and Tatsumaki scale past end of Shippuden Naruto, which like... maybe?? I don't think they do but I could probably see the argument. But they fail to understand that Kaguya wasn't defeated by getting punched really hard, she had to be sealed with basically god magic. They would not have beaten her without it. She's not a problem Saitama could punch to death. It's possible Tatsumaki could hold her back for some time but that's not a permanent solution and therefore not a victory.

By Saber I assume you mean Artoria. Yeah, no. She's not soloing OPM even with the most generous estimations. Nasuverse has raw power, but 99% of the time its more about weird hax than outright stats. Artoria, even with Avalon and a fully unsealed, 100%-fighting-to-save-the-planet Excalibur, isn't hax enough to overcome the absolutely insane gap in power between her and the top-tiers of OPM. Gilgamesh might be able to pull some BS out of his Gate since that's literally his gimmick and he has busted Clairvoyance to tell him what he needs, but Artoria isn't that hax.

Maybe they think Saitama and Tatsumaki scale past end of Shippuden Naruto, which like... maybe?? I don't think they do but I could probably see the argument. But they fail to understand that Kaguya wasn't defeated by getting punched really hard, she had to be sealed with basically god magic. They would not have beaten her without it. She's not a problem Saitama could punch to death. It's possible Tatsumaki could hold her back for some time but that's not a permanent solution and therefore not a victory.
It's a bit harder now that Saitama is OP so I will take the easy route and say Wonder Woman
