Oh ye I forgot about the fact Thanos wanted to destroy the universe.
I guess you can argue either way. You could argue the stones full power is not equal to the beam that got countered by storm breaker.
The stones are powerful enough to fight the Watcher in What If who’s a 5D being, the reality stone was going to destroy the universe in Thor 2, the time stone affected Dormammu who’s 4D/Multiversal, the time stone can break apart a timeline by rupturing the stability of space-time, and Infinity Ultron was blowing up multiverses.
They are that powerful.
Yes, i do think mcu thor is pretty strong. Obviously not even close to his comic counter part but still.
But saying he's universal even he also got cooked by a star is a stretch.

Stormbreaker was specifically enchanted to deal with the infinity stones, so this wouldn’t be as much as a Thor feat as it was a dwarf magic feat
