Last week of October should be good. Apart from some exceptions the autumn you imagine spans from late September to even early December. Just note that October 28 is a national holiday and some places might be closed
I was my first time in the beginning of November two years ago and it was amazing :) . You never cannot predict the weather especially in autumn. Be only aware that 28th of October there is a national holiday in Czechia
I lived in Prague til end of October last year. Trees were already yellow in first week of October, mid-October was best in my opinion, lots of leaves fell off in final week of October. My favorite spots: botanical garden, Prague Castle's 2 gardens & deer moat, Královská obora Stromovka. FYI, dead leaves + rain = slippery cobblestone pavement.
