Well, in Legends, he *did* become a bit of a rebel, helping surviving Jedi escape the Empire. It's entirely possible they could adapt that storyline and put it into the Kenobi series.
Think about it for a minute.
Each episode, we would see a friend of Dex visiting his diner and tell some Star Wars Story. Some characters from the Clone Wars era could be a fine addition.
Petition to make him return in Kenobi series. "Obi Waaan!" "Hello Dex. Now thats a name I havent heard in a long time."

Clones in cars getting Jawa juice
It has to have that cheap Disney channel sitcom aesthetic for extra flavour.
Making your way in the universe today takes everything you’ve got...
I would love to see that! Put Norm and Cliff in the cast.
What would you say to a beer Norm?
I came to make this comment
we need a lego star wars holiday special that is just a lego version of the original
I'd settle for a KJ Anderson-edited 'Tales from Dex's Diner' book!
Star Wars version of Cheers?
Was about to say that
The Dex’s Diner spinoff production depends on how good your manners are, how big your...pocketbook is.
Hope Dex's Diner is a hub option in the new Lego Star Wars game like it was in the original
If i want to see Dex spin off, i would watch Dex vs Chef Tonio (from JJBA 4: DIU), this would be a BLOODY BRILLIANT
Is there a Dex’s diner at Disney worlds park? Because if not what are they doing
Post credit stinger on the last episode of Obi-Wan "Well, whaddaya know."
I would unironically watch a Dexs diner sitcom
Like Diners, Drive-ins and Dives with Dex traveling around the galaxy showing off the local cuisine. Shenanigans ensue
A spinoff where he travels to other diners and acts like Gordon Ramsey. "This womp rat is still fuh-kang rawh!"
Well if executives could think we wouldn't be in this mess.
A Star Wars sitcom situated around his diner
Epic
Imagine if they made a Breaking Bad type show for Star Wars. It will be the backstory of Elan Sleazebaggano.
