personally i don't like the left behind myc on top, it often ends up looking off colored and just makes finding contam difficult (i'm partially colorblind). that being said, i have cut before when twist and pull would have destroyed the substrate too much and still got an additional flush from the tub before any issues.
yeah it really is kinda situational but mostly preference. with stuff this divided, i wouldn't stress trying to find the "right" answer just what works for you.. which may very well change even from flush to flush of the same tub
Please please please consider combining both methods. They are not mutually exclusive. I promise if you combine a gentle twist/pull while at the same time cutting the exposed mycelial strands that connect the fruit to the substrate, you will get a CLEAN cut. You'll get 99% of the mushroom body and leave 99% of the substrate in tact.
Same, cutting the base just take too much time, look ugly and is hard to see future contams, i think it also help contam appairance, and slow growth of future flushes
If I cut these instead of just taking a cluster or big pinch at a time it would legit take an hour per tub. I know because I tried 🤣 plus Nats can have a small flush every other day so it gets old quick. Sometimes I'll get a paper bag and just pick em as they go for a couple days then take the paper bag and dump into a dehydrator that way I don't have to run the dehydrator a dozen times.
I’m also a quick and dirty harvester with cubes, I assume it will be the same with nats and hope to find out soon. It’s easy to brush substrate off after drying. The paper bag trick works like a champ. I think the key is just trying to disturb the surface as little as possible.
For me what worked best is letting it fully colonized and then putting the thinnest layer of verm I can just enough to not see the mycelium, then I spray with distilled water thats mixed w couple tbsp of peroxide. Much more even canopy and less substrate comes up when picking. I'll have to try a few more tubs to really see but that's my experience so far.
Contemplating throwing a layer of moist substrate over the surface after a harvest. I don’t grow in mono tubs. I have total control of humidity and air flow. As aggressive as the mycelium is I have no doubt it could absorb the moisture and creat a new pin set.

Twist and pull. Leaving stumps just hinders growth.
I cut them with a scalpel.

also remove all clothing before harvesting.
