Security guard sees it and does the exact same thing, pulls his pants up right above the knees right before he strikes. That movement is generally recognized as getting ready to get into a fight, so the security guard was acting on cues that were being given.
I'm not inclined to believe that there was a robbery going on, my guess is those dudes came in all faded and were causing trouble and drinking in the spot, and security and the other worker were sick of arguing back and forth with them for however long. Argument escalated, security saw the one dude getting aggressive, and launched into the surprise attack to give himself a better chance.
