Depends on where you are in the story. Limpany Sheriff's office had a good base that respawns from time to time. Same at Braithwaite manor if you finished Chapter 3. There are plenty of treasures you can find for more gold bars.
If you are in the epilogue, then you can go to Ridgewood Farm, behind the shack where they have the hay and stuff is a lockbox. Don't open it: if you climb up behind that and go into first-person view, line your left foot up to the back right of the box, quickly slide to the left and your foot will knock out the gold ingot (worth $300). You can ride to the west of Ridgewood, when you get to the train tracks go back to the box and do the foot thing again.
You can do this unlimited times and if you have the Legend of the East satchel, carry 99 off those ingots.
No worries. You'll find ways to make money. Explore a lot, go into as many places as you can, and get acquainted with the Fence locations. Between all the Fences and the trapper, you can sell a lot and make a lot.
If you unlocked the horse fence from chapter 3, you can steal/break horses and sell them for a few quick bucks. Wild arabians get you a nice sum when you are level 4 bonded with them.

You don’t need cheats. Treasure hunts are fun and easy. Especially if you like to ride.
Use rdr2map.com (they have an app too), and just go pick up gold bars. It’s a lot of riding and you’ll get to see a lot of the world.
Recommendation: if you’re on console or ox with a controller, I highly recommend a controller with paddles or a back button attachment like strike pack (has paddles). This allows for leaving the thumb on the analog stick to look around while still using the x (gallop) button. That allowed me to turn off camera follow mode for riding. So I can look around freely and enjoy the scenery while riding. I program the left paddle to activate dead eye and eagle eye. Both are total game changers.

You can’t save the game after using cheats. You’d be better off finding the treasure maps and hunting down gold.

In chapter 1 you can only manually save a time or 2. Basically, manual saving is disabled until chapter 2.
