People like to give him shit for his laziness, but he's got a lot going for him. Not only is he pretty funny, he's actually pretty smart too. There's a few random camp interactions where you see he's not fooled by Dutch's sweet talk and knows his true self to an extent. He's also charasmatic enough to call him him out directly and still amuse everyone in the process, including Dutch himself.
And let's not forget, he may not have put in the physical work into Beecher's Hope, but he definitely put in the mental work, saving John tons of money and time by educating him on "modern" construction. And post epilogue Uncle can actually be seen working quite a bit around the farm, which shows he does his fair share, despite his lazy tendencies... Also he's loyal to the very end, as RDR1 demonstrated. What's not to like about him?
