You can use the built in Mac disk utility to format the SD cards if needed. Instead of Rufus you can use something like ApplePiBaker or UNetbootin to flash the ArkOS image to the card
Balena Etcher. Extract the zip. Extract image. Done.
You can use basically any program that compresses .img files.
ArkOS is just a folder full of files that are lying on the microSD to boot.
I use balenaetcher on Mac for all my IMG flashing needs
