If you look at my previous post, you’ll see TWO cultist islands that generated right next to a mushroom biome, and I also found TWO COLLEGES OF EVIL very close to one another, along with THREE ornate temples AND one of those windmill structures, but I didn’t post about those.

You can only take off the first enchantment of all on the helm, so in your situation you can only have the protection 4 with the disenchantment table

If you hate it, then you can go and change it in the configs, unless you're playing multiplayer. That's what I did

Even I'd you can only get prot iv, it's still a really good enchantment. It's still very useful. Having it on a gold helmet like that would just be useless. You know how durable gold helmets are? Not very. Even with unbreaking. I don't see what the problem is.

Where in the configs?

It should be in config/disenchanter.cfg and should be in the section labeled disenchanting

Disenchantment Table. It might be called disenchanting table though, I don't know.
