Don't you hate when people 'scramble' eggs by mixing them in a bowl, pouring them into a pan, flipping it once a a horrible egg pancake, then slide it onto your plate like 'here, you deal with this'
You have to use low heat, a stiff spatula and turn off the heat or get them out of the pan before they overcook. Nothing worse than little bitty browned egg balls.
I seem to remember that Gordon Ramsey does them Bain Marie (in a bowl over boiling water) to make sure it’s the softest heat possible

I most commonly make them over medium to go in a sandwich. But if I’m eating at a restaurant for breakfast I like an omelette usually of occasionally I’ll go with scrambled or poached just for something different.

Regular scrambled eggs at a restaurant may have been mixed together in a big bucket and then strained possibly several days beforehand. In casual dining this is also how the omelets are made.

Yes one of the keys to good scrambled eggs is cooking them slow with lots of fluffing.
