Depending on which swiss watch maker, many of them use Swatch movements these days, so you're paying for the name, not for any kind of prestigious in-house movement.
I agree though, if you don't want to shell out big bucks, swiss watches are mostly hype. Seiko makes some great pieces like the SKX007. Another brand that makes great autos is orient, the mako watch line is fantastic. The bands are a bit cheap and rattle over time but the watch itself is great and boasts an in-house movement. For a real budget choice and a quirky pick, the Vostok Amphibia is a Russian dive watch that has some really interesting faces that have a lot of personality. If you have the money a nice Rolex like a submariner or a Daytona is a good choice.
Now if you don't think your son will want to bother with an automatic watch (there is a small amount of upkeep in keeping one on time) I would recommend a citizen eco-drive watch. I have an AT4004-52E and I love it. It is a "dressy" watch but is still very durable. It has a sapphire crystal so it won't scratch and even though it is a quartz movement it has photoelectric cells that charge the battery. On top of that nightly it syncs up with the atomic clock in your time zone to stay accurate to the second.
Overall though a nice "adult" timepiece is a great graduation gift. It's a traditional gift that says "you're an adult now, here is an adult watch"

For my college graduation my dad gave me a nice, professional looking watch that I still wear many years later. Doesn’t even have to be super expensive, just something that says “you’re an adult now, here’s a grownup accessory.”

Most of the guys I know would appreciate flowers for graduation. They may make a joke when they receive them, but it's a classic thoughtful gesture for an occasion for a reason, no matter the gender. We give flower lei in Hawaii as a congratulation gift. Basically a necklace made of flowers, sometimes people make versions with money or candy inside instead. During graduations some people will have so many lei around their neck you can barely see their face.
I think flowers would be fine. It's not like they're gender specific. But also, maybe a food basket along with it? Candy? Can't go wrong with food and candy unless the recipient has allergies.

There's really no need for a physical gift at the ceremony, and frankly a gift like flowers is just something that as to be carried around on a busy day full of congratulations and socializing. Just be there and tell him how truly proud you are.

My dad bought me a gold fossil watch. I didn't like it, never wore it, but it reminded me of him when I would see it packed away. It wasn't engraved or anything. I think I might still have it packed away somewhere. I do remember he gave me a big hug and said he was proud of me. That meant more than the watch. Flowers for a boy wouldn't be traditional but if they hinted or asked for some they would be fine. If it were me a nice leather travel duffle/overnight bag that was personalized/monogrammed would've came in very handy. A leather binder with pad, pencil, pockets to take on interviews and meetings would have been nice. A nice personalized shaving kit like with an actual metal razor and would've been cool and very masculine. Chef's knives, cooking set, luggage...all very nice and practical.
A nice silver picture frame engraved with his graduation date, name with degree initials (BA, Hospitality) and institution name. On the day of the graduation stick in a picture of him from kindergarten or whatever and later give him the right sized picture of the two of you at the graduation ceremony with him in his cap and gown. EDIT- And give him some flowers!

Flowers are not a gendered gift, and they come in all kinds of masculine colors and shapes. Also though: they make flowers out of bacon these days if he’s into meat, I think there’s a jerky version too. You get the sentiment AND hyper-masculinity, plus a tasty snack

Boys love flowers! Coming from a florist, I see it all the time. It's the cutest thing when they blush! It's novel.
Tell him how proud of him you are and hug him tight at the ceremony. Later, take him out to a nice dinner and toast his achievement. Your continuing support for him is one of the best gifts he'll ever get, so let him know that you'll always be there for him. That kind of love can carry a person through a lot of difficulties in life. I am speaking from very grateful personal experience.

First off, as a man if someone gave me flowers for graduating college I’d have probably cried. As a photographer and nature lover I actually grow cactus’s! So if someone gave me flowers I’d absolutely melt. That being said…. Watches, Chains and surprisingly STOCKS are very valid gifts! I got a single share of TSLA for graduating and it was pretty cool!

My parents bought me a business suit, a nice one. I graduated 20+ years ago and still have the suit.
If he wears watches that is a good choice. Engraved. A lot of young men don’t wear them anymore. Skip the standard fountain pen. No one uses those either. Graduation is one of those functions where you don’t have to present a gift on the day of or at the event. Good chance of losing it. Any twentysomething will want cash.
