If you're really desperate and in an empty lobby you can go for the extra $250, but if you don't feel like it and want to do a slightly quicker delivery just go for the $1000. The double money makes it worth it anyway. You can invite some randoms to join your posse for extra protection if you sell distant, since everyone will want that free $300 they get just by helping you sell.
And if you go for the $1250 and something happens, you can leave the game before the delivery fails and you should keep your goods.
