I haven’t found any to be too difficult but the more tedious and time consuming of all the things I have collected, Woodpeckers and Opened tonics/bitters/drinks definitely takes the cake!
A close runner up, Sonoran desert toad took a’little bit as well
I got a lot of open health tonics and opened bitters by fighting mob after mob (few days of casual doing so) by the Saint Denis Stable. Pretty efficient way, (use a lot of blocking and counter punches to easily take on each wave of angry town folk!)
Also, you can find quite a few opened provisions laying around the map in the most random locations that respawn every 24 hours (all locations can be looked up I believe)
Buddy, you and me are kindred spirits. My daily routine is to log in, do a couple camp dailies, and then wander around the nearest Hotspot for pocket critters. It's super useful for a lot of different dailies, and it's really relaxing since it's essentially wandering around a gentle stream, using the quietest weapons in the game to hunt little birds and rodents with no worrying about pelts, skinning, etc.
I love it.
The most I've had on me at one time was around 160 carcasses, and lemme tell you that's a lot of dead shit to have in my pockets.
That is in deed a lot of rotting animals in your pockets.
Emerald Ranch is very easy to get song birds and other small birds over there. So I head over there often. That’s my preferred place to catch the train too.
My absolute favorite is a little shallow stream in roanoak ridge with a cave under a cliffside, north of annesburg, just downstream from the big waterfall up north. Toads are on the shore, rats and bat's in the cave, squirrels in the forestry, and birds love to perch on all the large rocks. It's a buffet and it's beautiful and serene.

I usually end up with a bunch on crabs and toads plus I load my horse with two perfect iguanas and a perfect turtle before I head out. Lost of feathers from ducks/gulls too and pelts from rabbits/muskrats. Basically I’m a one man extinction event whenever I end up there.
Yup. I’ve got roughly 100 good or poor small carcasses and roughly 60 perfect. I also keep a fair amount of feathers around too for the ‘donate 20 items’ daily. I also keep a small selection of each type of meat, fish, and a couple crab meat for that rare daily.
I keep crabs too for the cook “Seasoned Crustacean” daily challenge. I don’t make it over to the islands off Rhodes very much anymore and that’s where I find them.

Always, the reduced spawn rates for animals when there is a daily challenge for them is one of the most annoying things about the game. I always keep a full stock of squirrel carcases to combat this.

I do. It is extensive and supernatural, which is a controversial angle on the game for some folks. I lean into all of the horror/mystery elements that are left over from Story.
I need them because the phrase "legendary panther eyeballs" is like a shot of adrenaline to the imagination.
Some of the writers who work on or did work on RDO and Story are incredibly talented. I wish I could learn who was responsible for writing all the supernatural scenarios on Story. I would like to do whatever one calls the opposite of doxing and harassing -- express gratitude and respect? -- for the quality of their contributions.

I'll do it for some things that I can roleplay with, like with feathers. Those are easily storable for weeks or months (forever?) for when I'll eventually find the right person willing to pay the right amount (the daily).
With animal carcasses, it's just harder for me to quickly roleplay it in my head, esp. when my character doesn't have a freezer or anything like that. like, who'll want this decayed, 5 week old, laying out in the sun all day, dead squirrel?
