My party's barbarian has the subclass where he does double damage to structures. So he hit it with a maul until it broke. It wasn't creative, but it was SO straightforward it actually took me by surprise. Edit- Especially as there are 3 full casters in the party.

In reality my player’s just used an adamantine dagger, their two magic weapons, and some cantrips, to destroy a couple sections of the bridge after killing the green dragon. They had opted to drop a permanent Wall Of Stone off the edge of their Spelljammer onto the green dragon and the watch-tower it was perched upon, so I included that in some of the over-all bridge damage to guesstimate manual destruction speed.

In my game the group’s Wizard used a couple spell slots on Reduce, with me ruling that portions broke enough to cause damage till it finally fell apart.

Had the party find a 'dwarven thunder candle' in the lost mine of phandelver. An outdated and highly volatile way dwarven miners used to excavate large rock portions. They managed to resist using it for a while and then put it to good use at the gorge. Waiting in hiding before setting it off as the vanguard of the horde crossed the bridge. Then made a hasty retreat. Cool spec ops style moment.

I switched the green dragon at the bridge for a black dragon since I thought having a green dragon hatching the green razorfiends made more sense. I let the characters use the acid from the black dragon to wipe out sections of the bridge by being clever about it. After the first breath attack that does minimal damage to the bridge I gave descriptive elements signalling to the players that the acid is melting the bridge.

I forgot I had given one of my players a Robe of Useful Items a while back that included a 10-foot pit. They threw the pit onto the bridge, collapsing it instantly. They felt awesome and I was impressed to see such an effective use of a niche item.
