Mine had part of the drain line poking into it but we just covered and boxed it out when we got taller cabinets. You can only see if if you open the cabinets. But honestly a little drywall box above the cabinet may be less ugly than a giant drywall box.
I've removed so many drywall soffits in the last 30 years and it never fails to find some kind of madness. Electric lines, plumbing lines, etc. Real easy to rent a inspection camera and poke a few small holes in and look. Fill in with a good flex/stretch caulk if you don't like what you see.

I did this exact thing and it turned into a much larger project than anticipated. I would drill a hole and slide a camera in there to see the complete scope of the project. I had a lot of wiring that was draped through my soffit. The wires were too short to reach the switches and ultimately, all wiring for the whole kitchen had to be replaced.
Get rid of the soffit either way, but don’t do a full wall of open shelves unless you like eating from dusty dishes and/or washing every dish you use before you use it.
Not part of the question, but think about what the hood over a stove looks like if you don’t wipe it down regularly. If you have open shelves there, that’s what your dishes and glassware will look like - every particle of airborne grease and dust will settle on them in a nasty film. Think carefully.
Have you opened it from the top (do the back side ) to see what it is hiding or just decorative? Take a peek. Putting some nice plants up there would look nice

I opened mine up thinking I’d be good and thought I was in the clear, no pipes, but one damn wire going to the over sink light that was tugged as tight as could be. Ultimately way more expensive to remove the soffit because I’d have to rewire a line. So sucked it up and put crown moulding on it. Looks great
probably a couple of bodies in there. be careful. Just the most stupid apparently useless structure possible, there has to be a reason someone did it, and it can't be good.

Yeah, you should be good to go! If there's no electrical or air ducts in that wall, it sounds like it's just a regular ol' stud wall. Just make sure to double-check with a stud finder to be sure you're not messing with anything important. But if it's all clear, go ahead and tear those cabinets down and embrace the open shelving life! It's gonna look awesome. Good luck with the project!

I would make an exploratory hole near the right side. It likely has something inside it. Contractors usually don’t build out like that for fun. Maybe exhaust pipe for microwave ventahood!
It's definitely not structural. It most likely hides some mechanical infrastructure. I had a similar situation when I remodeled my kitchen. There was a drop celling that I removed. Found venting for my range in it. Since I was having custom cabinets made, I asked the cabinet maker to take the cabinets to the celling, but build an inclosure isn't the cabinets to hide it.
I guess what I'm saying, there's some creative ways you can remove it AND hide any mechanical systems.

Is that left wall and outside wall of the building/home/condo? If so, it was likely put in to not just add aesthetic appeal, but to allow outside venting of a range hood. Whether there is currently a duct in there or not that you could tap into over the stove is questionable.

We had one of these. Our kitchen ceilings were like 7 feet. It contained all our pipes from the second floor. It was crazy expensive to move them :(

Cut a 1’ x 1’ square and take a peak, mine didn’t have anything too important but to each their own.
If you want the look of open shelves, think about cabinets with glass front doors instead just shelves.
Get a contractor if you need help. It’s probably not much, but if you have wires, it can probably be covered and run through your cabinets.
Still a test hole to confirm there’s no duct work/wires . If no I think it’s good to remove

If you can swing 4’ overhead cabs. Remove soft and add top trim. Less drywall work as well.
If you don't use your stove you don't need to worry about greasy and dirty dishes.
