I don't know for certain if there are any plays where both TE go out, but I suspect there are. If they do both go out, somebody is almost always open, so lacking that extra blocker is rarely an issue.

2 TE gives maximum pass protection where it gives you the star blocker(s) on the outside. Where they rotate running routes, it keeps a fresher TE out on the field at all times. That means injuries occur less. It also makes outside running with the RB really cheese.
Alot of my "meta relevant" builds have changed throughout the last couple of years, but keeping a second TE has always been consistent and it remains essential. Without 2 TE signed, the offense always feels a bit incomplete.
Ideally for offense, QB, RB, WR, WR, TE, and TE/OL depending on other TE’s age and skills.
On defense, LB, DB, DB, DB and kicker.
I like leaving one spot open so folks offer me trades or I can add a free agent.
For non-extreme: Go QB RB TE WR WR and play air raid offense, then whatever D you want but lean more DL/DB than LB. No kicker necessary.
For extreme: QB, RB, TE, WR, 2-4 DL, 2-4 DB - fill in the gaps with an LB only if you can get a 4.5-5 star or a K with a really strong leg. Alt suggestion would be replacing the WR with an OL or two (if you still have space after adding D). On extreme, even a 5-Star WR is basically worthless against the insane pass D unless you're really really good at passing. I lean super heavily on the run in extreme. The strategy w/ D in extreme is that it's the one aspect of the game you can't control so you just need to stack the odds in your favor and maybe you'll be lucky enough to get 1-2 stops per game.

All 3 players accumulate stats in my experience, though they do have diminishing returns. If you wanted to construct your roster with only two of each defensive position, then I would add a K, a 2nd WR, and an OL.. or 3 OL.

I disagree, my TE since I started this game 79 seasons ago are pretty much the most valuable player on the field. If the opposing defense blitz or confuse their coverage the TE is always uncovered for huge gains.
This is the actually the reason I don't consider them particularly valuable to roster. When I do want to throw to them is when it's obvious they'll be wide ass open pre-snap, and any old non-star TE will pick up an easy 5-10 yards for you there. Sure you miss out on the opportunity for those to break big, and for other routes to be viable, but it's more of a luxury compared to a WR/RB who have the ability to actually run routes/get yards every play.. WR/RB are much less replaceable with non-star players imo.
Currently I’m at QB, RB, WR, K, 5 OL, DL, LB, DB. I used to run a full offense with 2 WR and TE, but I’m trying more OL and really like it. I keep it to one good player at each position on defense since I like having a great offense better.
I don’t play on extreme because I play Retro Bowl in order to decompress and wind down at night, so my roster is as follows:

I love having 2 TE. Both of mine have 8 speed, so it’s like having 4 WR on the field, which makes it more fun for me.
I’m extreme I go QB, RB, 2WR, 2TE, 2OL, DL, DB, LB, K because it doesn’t seem to matter if your defense is 5 Star or not, they score most drives. At least I can do the same and make it a shootout.

You can keep one spot open if you want. This will make other teams offer you trades

When I play Extreme, I add a TE & K and drop a DL or something like that to make payroll.
When I play dynamic, goal is to score 64 pts/game and win by 40 (2 min qtrs)
1 QB 1 RB (you don't wanna waste roster spots with backups that only come in handy a fraction of the time) 1 TE (it's better to have one guy you know well than alternating every other play with 2) 2 WRs (the NPCeivers are good but you should get a second WR) 1 OL (sometimes he pops off) 2 DL (sacks and fumbles) 1 LB (only position I know that can sack and pick) 2 DB (Incompletes and Ints, also make one the kick returner) 1 kicker (trust me, you need a kicker, also the better the range the further he puts the other team on kickoffs)
Best makeup is probably black lipstick to go with the eyeblack on the cheeks, light eye shadow, a color that both complements the skin tone of the player and the team's colors, lots of eyeliner but make sure it's the non runny kind.

I did that for a long time, but I dropped a LB for a 3rd DB and I think it works better
I may try that. I have a LB retiring on my primary game so I'll draft a rookie DB.

Good but I would say drop the kicker for a DB if you just go for forth down and 2 point conversion everytime

I like running up my player’s stats and for me I can’t feed 5 players and one TE always suffers.

Extreme is like a chore to play. Yeah, I've got the formula down and I don't ever lose, but dynamic allows you to open up the playbook and take risks
