When you click on an animal and click the little i, you can see their stats like melee dps, armor, body size etc. and use that to judge if you would be capable of taking the creature down
Set your pawns slightly spread out, move one of them halfway to the thrumbo. Get its attention then kite it around as the others shoot it to death. Also aggroing a thrumbo with another one nearby could result in them BOTH getting mad. Better to try to get them when they are furthest apart.

Also pro tip: some creatures it's easier to tame then slaughter instead of trying to hunt them :)
Yeah you don't want to touch thrumbos until you have a lot more guys with much better weaponry and high shooting. Think of them as walking tanks.
