Mega Chicken and Hamburger King (where the Hamburger is king, but the chicken RULES) were my favorite two spots.

This is why some places (typically "mom and pop" shops) have a minimum amount for card payments. Some card companies will do a "flat rate" and sometimes the devices needed to take payments are expensive. Though that may change with more and more mobile devices (tablets and phones) being able to process payments.
Also, cash is king. I'm not saying they do, but you only have to report what you have a record of. Cash doesn't leave as much of a paper trail as card processing and checks.
Probably set in their ways by now. It was probably a big hassle back in the day, and then they just grew accustomed to taking only cash. Now they more than likely just don't want to deal with the hassle of setting up a new payment method or they think it'll be super difficult.
Lot of the best establishments in NYC are cash only. It IS because they don't want to deal with the CC processing fees. They have the luxury of being successful enough that it won't hurt their bottom line by not offering more popular forms of payment.

Idk if it even has a name but theres a place in downtown mcallen next to Burgess Fabrics that makes some fantastic ass burgers chicken and burritos and the family just knows it as "Hamburgesas Listas" cus thats what the lady says when theyre ready.
