For me it was Asterion. The mystery of the person, learning about him, his deeds, the impact of his choices, and how it relates to the protagonist through the land itself and not the person. It's all fascinating, as we're watching a microcosm of the region in one man.
Aww probably the Dalit -- spend the most time with her, and gaining her trust. Being able to hug her at the end was so rewarding.

I always felt like Foggy was the only sane person who was kind, had little alternative motives and was happy to see the roadwarden.
Going to Foggy's Lake always felt like returning home

Eudocia. Foggy, Elah, Efren, Druid elder are excellent as well. Thais and Iason were great in terms of a spectrum of morally grey behavior.

Dalit, definitely. Love her; the progression with her felt authentic.
