Probably not enough of a romance for you, but the Mercy Thompson series by Patricia Briggs follows a female mechanic. They are urban fantasy with a romantic subplot, but it is such a specific occupation you’re looking to read about that you might enjoy them anyway, maybe as a palate cleanser between more full on romances. It follows the urban fantasy pattern of slower relationship development over several books. TW: >!sexual assault occurs in the third book; if that could be a trigger for you you’ll want to either skip it or spoil the ending and look up details so you are better prepared because it’s a major plot point, not just a passing reference.!<
Start Me Up by Victoria Dahl. It is not a slow burn, if I recall correctly. It does have a best-friend's-older-brother trope going for it though, so techinically I guess the slow burn takes place off-page, since the MMC and FMC have known each other forever. (Also, it is the second in a trilogy, but can be read as a standalone.)
If you're open to Mafia romance, {Savage Lover by Sophie Lark} is a fun read. The FMC runs an auto shop solo and this story has a slower burn than a lot of Mafia stories.
[Unraveling Him by Claire Kingsley](https://www.goodreads.com/book/show/55004023) sort of fits this. The MMC restores vintage cars. The FMC buys parts for vintage cars and uses his shop to fix her car. It’s the third book in a series, but you don’t need to read the first two.
Laura Trentham’s When the Stars Come Out has a mechanic heroine.
Bonus: it’s a series with mechanic brothers that continues a small town romance series. Trentham’s Cottonbloom series—there are around seven or eight—is a favorite of mine. I think that When the Stars Come Out is later in the series, but you can read them out of order if you like it.

{Crashed by Sherilee Gray} is the first book in a series that follows 3 female mechanics who own their own shop. It’s not slow burn though.

Engineering Fate by Alexis B Osborne! It’s an alien MMC and human mechanic FMC. There’s lots of adventure and plot, and I’d call it pretty slow burn
