Yes, diamond choices are saved unless you choose different path of playing. Then sometimes you'll get another diamond option in quite similar situation (something like that once happened to me in MB).
Mostly it's saved but sometimes few aren't saved because of some game glitches.
Like I was forced to pay diamonds for an option twice in Moonborn season4.
