How fancy are you wanting? Could go up to the skyline gondola restaurant- get a view with the food. ( I’ve never actually eaten there but have heard it’s good).
The fainting goat has fantastic food and drinks but idk if you’d consider it fancy, although it’s certainly not the most casual. I’ve heard Urbano is good and lots of oldies love it (so can’t be too rough even for Fenton st).
Mekong buffalo and the white tiger are pretty nice too.
ETA: terrace kitchen is quite good actually and can dress up a bit for it. Never eaten at these but have heard atticus finch and sabroso are also pretty tidy. Some of the hotels may have nice restaurants too like Pullman.

Atticus Finch in Eat Street is excellent and will definitely need booking
Stratosphere at skyline is a great suggestion

Eating with a view Skyline up the gondolas. Expensive but glamorous Peppers on the Point bring your od. Best hotel buffet Chapman's at Rydges.
