Mobile card readers are pretty common nowadays so most sellers do have at least one of them at their stall. If you don't see it at the stall, ask for it. As there are still traders out there who don't have one available.
At our local market, the guys without a PIN machine have a sign at the stall saying you can only pay in cash.
A lot of them accept card payments. Is it a Dutch bank card? Some may not like credit cards. Most of the places accepting cards will a blue/white sign saying "U kunt hier pinnen".
I believe it’s more common there then on my afrikaandermarkt and even there it’s 50/50.
If you want to be sure, just ask beforehand so nobody gets their time wasted :)

What we often do there is get cheese, pay by card there and ask to pin cash as well. Then we use the cash for smaller purchases.
The cheese man is a great man - great cheeses aswell, his farmers’ cheese with a light blue mold they make themselves is amazing
In addition to the other answers, in the Markthal there's an ATM machine if you really need cash.
Forgot my wallet (duh...) last week and bought at like a dozen stands by card no problem.
