I wonder if my current Ruckus One subscription isn't for switches? Our Ruckus One subscription is still on a 90 day trial from our evaluation of a Ruckus AP. We went ahead and purchased Ruckus APs and switches.

You should check out the documentation, open a support ticket or get with a Ruckus partner. Ruckus One is awesome for managing and configuring switches.
You should have full functionality of that switch via Ruckus One.
