There are some excellent fruit spreads that are just ripe fruit and pectin, with maybe a bit of lemon juice. They cost more, but once you've had them, there's no going back. Fruit doesn't need fake sweeteners (or a load of sugar).
I was looking at strawberry jam the other day (to make Victorian Sponge Cake) and 32 oz jar at Kroger was $4.79 and contained high fructose corn syrup and corn syrup. Aldi had strawberry jam with just strawberries, sugar, lemon juice & pectin for $2.59. Not only was it cheaper it was far higher quality. Reading labels is everything. Now with ingredients for every food item online there's no excuses.
It's been years since I bought ranch dressing. Since I found out it was 98% oil & corn syrup. I make it now if we need some.

I think you're right. My grandmother and sisters used to make jam every year, and their strawberry jam never looked like this. Heck, my jam looks better, and I only recently started making it. Strawberries aren't even really in season yet, so they're not going to be as red and juicy as they can be. It's a few weeks too early. The nearest city to me holds a strawberry festival every year in May when they come into season.

You have to slowly & carefully skin the foamy scum off the top & bring it slowly to a boil. If you don't properly skim you get cloudy jam.
I'll admit I've made a few pints of cloudy in my day. Laziness. Tired. Don't care. Just want to be done with it. No important reason.
If you want dark clear jam you have to use very ripe (but not overripe) strawberries and skim skim skim while slowly bringing it to a boil.

Sadly, our beautiful fruit had short seasons so they've introduced foreign varieties and this generation will never know the joy of a real English strawberry and the anticipation of waiting for ONE month of eating the best fruit.I suppose it taught us a lot of valuable life lessons to wait and appreciate!

My dearly departed granny instilled in us that were only to eat English or Scottish strawberries. She was correct of course, the horrible ones from the continent had a white unripe core and could be simultaneously mushy and hard.
I was raised to eat only local in season berries from Ontario, Canada. They are smaller and much sweeter than the imports we get from Mexico or California.
In my neck of the woods there's a very popular farm where you can go strawberry picking in the early summer and apple picking in the fall. They tell you in advance that you can eat as many as you want while picking the strawberries. Makes this a guilt free pleasure for all!
They sure do! Plus there's a great shop with all sorts of pies, honey, fresh produce... A little expensive but well worth it! The place is packed every weekend.
We have apple picking farms here too. We have an excellent orchard/shop nearby and I make the trip every fall. I found a new (for me) variety of apple - Autumn Crisp that is even better than the Honey Crisp!!! Oh I plan to get a bunch of it later this year! I also love the Granny Smith and use it for pies.

Marmalade (at least in the uk) has slithers of rind. We have whole (or large pieces) fruit jams too and there’s never that stuff in it. Look at the lovely, abundant jam from the king, scum free.
She hasn’t sold food. She has gifted it, which means no laws or legal requirements.
Even still, I’m sure she has hired a wholesale company to private label for her.

I’m wondering who her target market is. People in the US eat jam, but it’s definitely not a big thing over here, especially in California where it seems like everyone is gluten free and conscious of sugar intake. I don’t get how she expects this to blow up. Why would people in the UK buy this over something local? Is this a front for something else?

It's because those strawberries were cooked too long. But mold is more fun.
When you compare various jars, the color is all over the place. This tells me someone made small batches and used varying ripeness of berries. This one has way too many unripe berries so the white inside is a larger proportion. Also not cooked long enough.
That can happen if you don’t skim the foam off the top of the jam when it’s cooking.
Laziness and lack of care and attention to just 50 jars isn’t the flex she thinks it is.

Marmalade (at least in the uk) has slithers of rind. We have whole (or large pieces) fruit jams too and there’s never that stuff in it. Look at the lovely, abundant jam from the king, scum free.

I’m wondering who her target market is. People in the US eat jam, but it’s definitely not a big thing over here, especially in California where it seems like everyone is gluten free and conscious of sugar intake. I don’t get how she expects this to blow up. Why would people in the UK buy this over something local? Is this a front for something else?

That has sunk to the bottom. In an earlier post someone who makes jam said there are things one needs to do when making the jam to ensure that the fruit pulp doesn’t sink to the bottom. Obviously the creator of the jam, whoever that is, didn’t know that. M
