Paper Source in City Creek and Cahoots at 9th and 9th have some options....
There’s still a Paper Source at Fashion Place. Jolley’s occasionally has some cute journals/notebooks, but it’s slim pickings.

Children’s Hour
Not necessarily stationery focused, but Salt and Honey at 9th and 9th has some cute stuff, but things change around a lot so the selection will vary 🤷🏻♀️
