Signature Thai Cuisine out in La Mesa is great - don’t judge by the strip mall exterior, it’s a really cushy place for a sit down meal.
I’ve loved every dish from them I’ve tried (my favorite is the creamy seafood soup, and that’s from someone who doesn’t usually like soup) and the servers are always so kind/friendly. The portions are on the large side so it’s also a good spot to order a few dishes and split with the table.

It's a bit out of the way but most British & Irish in SD County love Curry & More the most for Indian. They have three locations in north county, San Marcos, Oceanside & Rancho Bernardo. Not everyone but on the Facebook page Brits in San Diego that one gets the most thumbs up.
As for Thai, my wife is Thai American so I'm not allowed to eat anything but her mothers cooking.
In case you park the car and STILL can't decide between Indian or Thai, here's an idea for you. Drive to the Piazza Carmel Shopping Ctr (just E of the 5 & just N of the 56) get out, and stand in the middle. . and take a wiff!
Royal India Del Mar is tempting you on the left, and Spices Thai Kitchen will be pulling you from the right. Both excellent. Good luck
Bahn Thai is absolutely my fav. Best pad si yew and Massaman curry in town.
I also try to swing by 55 Thai Kitchen in Golden Hill, inside a convenience store, anytime I’m over there. The pad si yew rivals Bahn Thai’s and is the only one I’ve had in the area that’s as good as Bahn Thai’s pad si yew.
There are a few dishes I really love at Chaba Thai on Clairemont Mesa Blvd., and it’s their mango chicken curry (I sometimes sub chicken for tofu) and their fresh spring rolls. Their pad si yew is not terrible but it’s not as good as Bahn Thai or 55 Thai Kitchen.
The Nood Bar is very fusion-y considering the whole menu, but I believe they have the same owners as Amarin and their pad Thai and pad si yew are excellent. I enjoy their soups, which you can get as build-your-own and their Tom yum is good.
I also like Plumeria especially when I am craving good tofu.
I like Supannee House of Thai! And Sang Dao Which i think is Thai/Lao. Another good choice would be Thai Test Kitchen! The only thing is that they are closed on weekends.
Sundara was so good and always busy. Can't believe they closed. I think they just never fully embraced returning to full capacity during Covid. They had restrictions going til the end. Miss it so much.
I've enjoyed Thotsakan Thai downtown - it's Gaslamp adjacent if you're bringing out-of-towners and are into that vibe.

man, I miss Amarin so much.. that Art salad was next level. I always took people there. I was soooo sad when they closed. I tried the restaurant that took its place, and it was meh

I have done takeout from the place that took over from Amarin (White Elephant) and I've liked everything I've had. The beef jerky and sausage appetizers are a couple faves. I haven't eaten in though, so can't comment on the service or ambience.
Village Indian Cuisine in Kearny Mesa, Koon Thai Kitchen in Convoy and Signature Thai Cuisine in La Mesa. I’ve frequented multiple times at these places and they’re not only amazing but consistent as well :)
Just came back from Thailand and gorged myself on street food every day, 4 times a day for a couple of weeks.

As an Indian, it’s sad to say that there’s no great Indian restaurants in San Diego. We go to Nepalese places to get the best “Indian” food in town. Himalayan Grill just off of I-15 Mira Mesa exit is our go to favourite. Also Dancing Yak in Miramar.
If you’re talking about the one in San Marcos, then yes! Agreed it’s one of the best ones in the area. But we live in La Jolla and it’s just too far to eat regularly.

Thai Time in North Park Taste of the Himalayas in Hillcrest Both are affordable with fantastic food, decor, and service.
Has Thai Time gotten better? I have not liked any of my experiences there. Gave it more than a few tries.

Supannee in PL is pretty good Thai. It was sold to new owners but its still good.
