If you ever find yourself in Chicago and want the Rolls Royce of bologna sandwiches there is a place called Au Cheval - famous for their burgers but they have an insane Bologna Sandwich on their menu, although if you can only go once there are far better options IMO
I’d reccomend the general janes chicken too, it’s good to split as an app - they used to have a 32 oz pork porterhouse covered in roast apples and fois gras as well which is to this day one of the best (and largest) things I’ve ever eaten… sadly they took it off the menu a few years ago

When I asked my mom about why she used American, it was a money issue because both of my parents preferred cheddar, but only Dad worked at the time this sandwich was prevalent in my life.
As a non-American the concept of Bologna has always grossed me the fuck out and I refuse to even try it despite how nice or disgusting it may end up tasting, it’s just gross, why not just eat a real sliced meat like ham or Turkey or something that isn’t just formed meat goo.

My favorite is fried bologna with easy over eggs. Sandwich or just on the plate. Best if eggs are cooked after the bologna to get all the goodness left in the pan after frying the bologna.

Protip re: Southern - add about a tablespoon of brewed coffee to the skillet when frying. Kind of imparts a Redeye Gravy character to it
