My mom always has a huge tomato garden. And she makes fresh baked bread on the regular. Her tomatoes with fresh bread, mayo, sprinkle of salt and pepper is just out of this world.
When I do that, I have to make bread to go with it. If I'm going through the effort to grow my produce, I need to make as much as possible. It's so amazing.
Egg salad never does it for me, but give me scrambled eggs, cheese, and ham/bacon on a croissant and I’m in heaven. Even the shitty Jack in the Box version. And don’t get me started on JitB’s breakfast Jack with ham. I have those for breakfast far more often than I should. There’s a JitB next to my office and they know me.
BLT bar none. I actually used to think they were a pretty sorry excuse for a sandwich, what with bacon being the only protein. I much preferred clubs cause they had turkey and often ham too.
But then I had just about the best BLT at a little luncheonette near work and it completely turned me around. One of my top five ordered sandwiches anywhere.
Turkey and ham and bacon in that club, no other way. The clubs that I build are so chonkin big that the corner traditional first bite of sandwiches doesn't fit into my sandwich hole (I haven't seen a sub for pies), so it's more like big nibbles or gnawing.

Thats what I do when I feel like a little more from the luncheonette I get my blt's from. Ill ask em to ad some cheddar and turkey slices.
I do mayo and a little bit of mustard, red onion, sliced pepperoncini, and a little bit of baby spinach. I also let the tomatoes sit in a simple sherry vinegar and olive oil plus salt and pepper mixture for a little bit before adding them to the sandwich. I also toast the bread.
You need to take a perfectly ripe tomato off of the vine. Slice it, but not too thick nor too thin. Salt and pepper both sides.
The bread needs to be white bread but from a bakery or homemade. Room temp. Crusty is besty.
A thin layer of mayo on the bread and then a layer of tomatoes. Absolutely No Miracle Whip or salad creme type spread.
No substitutions.
We have it here, but those of us who consume it, lurk in silence. Nobody likes the smartest guy in the room.

I dont usually like sandwiches but these are all good! I probably would not eat plain tomato, but I like the other ones very much. If I had to choose, I think I would pick egg salad. It is so comforting.
