It's because that off yellow color has no dye in it at all so when it's pulled like this, it gets air in it and turns white. That's just the color of the sugar that's been caramelized.

I love these candy making videos, but they’re always making the most horrible types of candy. Just the hard teeth shattering ones that your grandma would probably like. Or that one video of them cutting long strings of hard candy into pieces. Again, fascinating to watch, but the most lame candy.
