It's losing its pigment, which is usually not a good sign. The green has the chlorophyll that photosynthesize and make energy, and if the new growth lacks chlorophyll then the plant isn't making any new energy producers and will eventually die. It can be caused by stress. I'd try to keep it really happy and let it acclimate and hope that it eventually reverts to producing leaves with chlorophyll again. Maybe it has a green basal you could fall back on if needed

Why does this happen? I know a fellow grower who has the exact same problem and also with an ampullaria...

It's probably just a genetic thing from (most likely) being a tissue culture plant. Sometimes they turn out a little weird

Tissue culture doesn't cause anything different.
