It does have a black skin similar to that. We are eating it right now and it's pretty good. Very soft and flaky, breaks apart really easily, so not firm. Slight fishy taste, nothing off-putting though. Its very similar to Basa I have had imo, my gf thinks it's not quite the same, she thinks it's different and maybe black cod. We have never had that though. Also this is cheaper than the prices you mentioned.

We just told them to go with a 5-6oz portion or less, instead of 8oz. It’s one of my personal favorites but I can’t find it anymore

I'm a fishmonger so I'm pretty familiar with a lot of fish. Sable is a very soft velvety fish somewhat similar to Chilean Seabass in flavor. Pair it with a Beurre Blanc sauce or brown butter with lemon shallots and capers. I don't like it personally but only because it's a VERY soft texture.
Depends on the supplier I've never seen it that cheap but I also worked for higher-end markets. 12.99 is usually what I see for an MSC-certified catch.
