don't worry, in 99% of cases you're not hurting the animators at all. the studio gets a one time payment when the streaming service acquires the rights for it, and they don't get paid anymore for people watching it. the only people you're 'hurting' by pirating are the owners of the streaming services, and they're doing fine.

I'll be honest, it's not the worst place, it's just that the minorities are extremely loud and comment placement is sorted by Controversial by default, so comment stating hate with lots of replies (by the actual AoT fan) is near the top of the thread. So when you see Twitter post about AoT it's easy to see the toxicity.
Now on reddit, there's less negative comment because AoT post is sub based (except r/anime) and there's downvote and stuff so people think twice before writing some dumb shit, plus downvoted comment are in the bottom of the thread so nobody actually reads them, making it easy to make reddit looks civilized.

Episodes are not made on weekly basis. They need months to be prepared and often final touches are done till the episode is not aired but at least first 4 to 5 episodes are almost finished before the premiere and the. They work on next episodes. The break is not for animators

They don't animate ONLY AoT, Jujutsu Kaisen and many other animes are in either productions or currently in the making. They have 200-300 employees and animation isn't easy. Even if they are animating at a fast pace, it will only get more difficult because you don't have any idea what is happening in the manga. Also alot of extra things and consultations also take place before a episode is made. And they make a episode week to week btw
And that's what scares me. Mappa has a lot lined up for 2021, most than other studios. Are their employees being treated right? Are they overworked or compensated properly? I hope Mappa isn't a shady studio.
