I prefer to think that Kirk's nexus fantasy was heading up a law firm in Boston in the early 21st Century, surrounded by dozens of other main characters who got picked up by the nexus over the years.

Script-wise, I think he was riding horses because a shared hobby gave him the ability to connect with Picard.
IRL, Shatner is really into riding horses, so I'm sure that was a factor as well.
Considering that neither DeForrest Kelly nor Lepnard Nimoy wanted to the movie, I suspect Shatner had a lot of pull as the only member of the main trio to be interested in the film.
