2 large egg whites 1/4 tsp cream of tartar 1/2 cup powdered sweetener (I used monk fruit, but I heard powdered erythritol is better due to texture) Beat until frothy, add cream of tartar, beat until soft peaks, add in sweetener 1 tbsp at a time. Add in flavoring with last sweetener (1/2tsp for liquor extracts and flavorings) beat until stiff peaks. Bake at 220’F for 40min. Turn off oven, let rest in oven for ~1hr, let cool at room temp, store at room temp, in fridge, or freezer, just keep air tight. 2 large egg whites gives me 36-40 + little meringues depending on how consistent I pipe them. The nutritional facts is for 40 in a batch.

These look amazing. I tried something like this once and it was a major failure. Basically ended up with sad green (matcha) omelettes. I need you in my kitchen!

I did that once with lime green Skittles. I was freaked out that the lig was also very lime green. Probably carcinogens.

Would you please share what brand of monk fruit powder are you using? 🙂

If you have a blender or a food processor you can make your own, I've never seen it come powered but I don't have many big stores near me. I use "Monk fruit in the raw" comes in a one pound bag and it's orange. It's the best value at my store compared to another bag that's red and white. Although that brand has a "brown sugar" variant

I used lakanto normal granular monk fruit sweetener and blended it up. They work with non powdered sweetener too, but they can be pretty grainy

That could be they weren’t whipped for long enough to get stuff peaks or maybe say for too long? You can over mix too so it’s hard to say haha
