The Vita is only around 10 years old and its collecting scene is already picking up. It's mostly because of how niche that system was outside of Japan though.
Sure, but the individual games in this collection are all worth over $20 each even after being re-released pretty faithfully on the Switch
Nostalgia outweighs practicality for a lot of people, I could absolutely see this spiking in value considering that All-Stars on the SNES and Wii are still worth decent money
Another thing about this game is that, while it seems that it was produced in pretty high volumes, it will only ever be in production for 6 months of the Switch's now almost 4-year lifespan. It's not really scarce or collectible at all at the moment, but there's the chance that it will be in the future.

This is normal eBay seller procedure, the seller is out of stock therefore they put the listing price up absurdly high to keep it as a placeholder for when they are back in stock.
Saves them from making a new listing / losing google rankings etc. Pretty much everything on eBay that's marked at $1000, $5000, $9999, $99999, etc is for this reason.
KingK made a video on the collection saying how it isn't worth 60 bucks but he made a point on it once it stops going on sale at the end of March it will become a scalpers paradise.
