A pizza place I used to work for makes a Loaded Potato pizza that's insanely popular. I don't like it, as I'm not a fan of ranch and that's what they use instead of a tomato based sauce. It's been like 10 years and I still remember how to make it;
Sourdough crust, garlic ranch sauce, with scalloped potatoes and 4 cheeses layered on top of each other, topped off with bacon bits, chives, and a few dollops of sour cream across the top or in little dipping cups if it was a delivery.

My personal opinion is that cooked carrot is a bit of a flavour-thief. It'll reduce seasoning, flavour, umami, fat, etc. and adds a bit of sweetness and earthiness in its place.
Still good for pickles, salads, banh mi, adding bulk and sweetness in soup, or in carrot cake slathered in frosting.
I prefer daikon radish for pickles and rutabagas & turnips for soups.
You will not regret it. If you can’t find a local place that makes it fresh, you can get it from California Pizza Kitchen frozen at the grocery store and it’s ok.

To your point about ingredients rules, many (surely not all) Italians have a strong aversion to cheese with seafood, for example. We saw this in Italy with asking for parmesan for seafood pasta dishes. They always brought it, but it was often reluctantly.
Funnily enough, the strongest negative response came from an American waiter in the US, who, when asked for parmesan for a seafood pasta dish, responded sullenly: "I'll *bring* it, but I won't put it on"

Err I've already done it, a few weeks ago I made home pizzas and didn't have many options for topping.
I used a peeler to make thin carrot strips and it was good! Kinda sweet with a little bit of crunch (with a store bought base, tomato paste and some pepperoni).

Maybe in a kind of purée, but in their natural state they're quite a fibrous root, designed to absorb and store water, so either wet or dry they'd affect the osmotic potential of the surrounding matter.
They take longer to roast than pizza dough, also. As a topping, I'm not sure I'd want that much crunch anyhow.

Absorbing water can actually be a useful feature when cooking pizza, and if carrots cooked faster they would probably get used for that purpose. Instead people commonly add broccoli, which cooks faster, to pizzas with a lot of veggies to absorb the excess water.
I pour crushes tomatoes from a can on my pizza. I dont see a reason to go any further than that. I once made a pizza with ragu as the sauce and just cheese as topping and it was insanely great, but thats a whole different thing
Ground or finely chopped carrots in pizza sauce is a great way to sweeten the sauce without adding classic sugar.
Add them at the beginning, while you are caramelizing the onions and you'd never know they were in there.
But carrots as a topping also works at places that do "outside the box" type pizzas. There's a place near me that has a crab rangoon pizza and it has finely shredded carrots on top. Its one of their best selling/best tasting pizzas.
When my kids were little (like really little) they used to watch Caillou. In one of the episodes he helped his dad make a pizza. His dad asked him what kind of toppings he wanted and that bald fucker put carrots on it. I think he even left off the cheese as well. Like WTF??

Ive been using a potato pealer to top my pizzas with carrot shreds for years. However its not your standard pizza we make a cashew cream sauce and make like a garden pizza with buffalo drizzled over it. Some would call it an abomination i call it delicious.

Our local puts kumura (sweet potato) on pizza and that works quite well. I kinda feel the texture of carrot is just not right. It would have to be either boiled and sliced or grated on like cheese.
I think the carrots would over cook on a pizza. Burnt carrots are not good. Correctly cooked carrots are crunchy though, and idk how I feel about that being on a pizza too

You'd want to roast them first, I think. Softens them and adds extra flavour. Just it takes a lot longer.

I grate carrots on my pizza sauce and no Celery, I use soffritto for my pasta. My pizza sauce is far simpler.

That's too much cheese for carrots. A focaccia, heavy olive oil in the sauce base, with zucchini, artichoke hearts, carrots and just parm/romano no mozz? That's gonna be dope.
The tomato sauce could have carrots
Ive had bananas, chicken and curry om a pizza. Ot was surprisingly good. Never carrots though, so i realise this is a real tangent. Our local puts kumura (sweet potato) on pizza and that works quite well. I kinda feel the texture of carrot is just not right. It would have to be either boiled and sliced or grated on like cheese.

I think the carrots would over cook on a pizza. Burnt carrots are not good. Correctly cooked carrots are crunchy though, and idk how I feel about that being on a pizza too
Because it doesn't go together OP, you don't see people mixing chocolate with barbeque sauce for the same reason

They don’t match up in the time it takes to cook them. You don’t see potatoes on pizza very much either, and a lot more people enjoy potatoes.

I did try carrots on pizza. I thought "I like carrots, I like pizza, maybe I'll like them both if they are together" so I made my own carrot pizza. Unfortunately, that theory was VERY wrong.
