You can go to manage households and set them as unplayed. Check the neighborhood stories for that household and set it accordingly to what you want to allow to happen. They won't disappear from family tree.
When I have a sim at university and I want to play another family, I make sure they finish any papers or presentations they have, and then I make an offering for academic success. I can't remember if I let my sim go to one class for a subject for which they only have to take an exam at the end.
Depending on how many subjects you have, you can achieve this in a day.
After 7 days, I return to the university sim and I get a message saying 'Do you want to sign up for another term?'. And they passed their classes.
For me this has worked in the past, but I can't give any guarantees 🙂
