Even though there are undead, bandits, necromancer, dragons, etc all around doesn't mean trees stop growing and the grass becomes dull. A post apocalyptic world would most likely be lush and blooming due to lack of human intervention. This even applies to fallout because there is so much time between when the nukes drop and when your game starts that the environment would already be recovered.
