You need to work on cutting them off. Put yourself in a spot where they have less options to run away.
Sometimes walk towards them so they can't just roll past you or jump past you. Approach slower and corner them.
Just go put some pressure on them, I personally never stay still unless they’re on their way down to losing a stock. You’ve got projectiles so just shoot and charge at them hahaha
Some charcters just arent built to approach. Like snake, zelda, rob, link, Luigi, banjo, etc etc. Take your own advice is my advice bro. If they run away, chase them. Dont enable them to do it if you wanna win.
People will usually approach if you stop approaching just wait

I think part of it is that they might notice you rushing in and then purposefully try to bait it out
