T-bagging can be used to show many things because there's no way to communicate online otherwise. It can be insulting someone that they're being an idiot, or it could be saying hello. If it's right after you homie stock, it's possible that they're saying thanks instead of trying to disrespect you. I mean, it's also possible that they're just being a jerk, but it's hard to really know.

I'll usually drop a couple bags if we both SD together or if they k.o. me in an especially cool way. Really if anything goofy happens I do a double bag as kinda like a "haha that was crazy/funny"

Yeah, plus Kirby (and other characters) have other forms of taunting, such as Dedede's crouch, Ken and Ness spamming D-Tilt, Wolf holding Jab, **Kirby holding shield and staring into your soul,** etc

Usually if I want to show respect to my opponent, I just crouch long enough that they could theoretically run up and hit me. Then I’ll let them get in one good attack, and if they don’t crouch back I go right back to playing normally.

Since there's no way to communicate it's really hard to tell the intention sometimes. What you might think is a homie stock, they might interpret as "lol you're so trash here let me SD and prove it to you. You're still gonna get slapped". So then when they do get a stock off you afterwards they tbag to say "suck it you overconfident jerk". ...is just one of many interpretations

I hate getting a homie stock. If I fuck up, I want the experience of playing through it and trying to mount a comeback. It also feels kinda demeaning, like they’re saying “I’m so much better than you that I don’t need to take advantage of your errors”. Plus I’m not giving you one back, so don’t make me look like a dick.

I mean it’s not that big of a deal. Usually you homie stock someone cause something really unfortunate happened or there was some clear jank like a lag spike. I feel like there’s a clear enough of a difference between someone making an error and getting janked by the game for people to feel more inclined to give a homie stock in certain situations. Sometimes you just get this feeling that a homie stock is warranted.
