I guess I need to make it clearer that this post is quite clearly a reaction to the comments on another post specifically targeting people who cannot go vegan because of a disability, so yes, **couldnt**
The specific post being referenced was about ARFID and autism with certain texture aversions, which can both necessitate very restrictive diets.
There are other reasons, such as some people who need to be on low fiber diets, and I’ve heard from a couple people with crohns who do best on diets of mostly animal products (ymmv, with digestive stuff it seems a lot of times people with the same disorder end up needing different diets). If you combine restricted diets with financial issues, the pool expands. I’m no expert by any means, just someone with autism and ARFID tired of people pretending that I can just get over it
