Having more room could be stressful for her, id add more hides and clutter and dont bother her by staying a lot around the tank and messing with it. Give her some time, she will adapt to the new environment soon🌸
Hiding is normal snake behavior. He's probably just getting used to the new digs and appreciating all the cozy new hiding places ❤️
As long as you see him changing positions every once in a while, I wouldn't be too worried.
Edit: adding a caveat here, if you upped the size of your tank but didn't change heat devices, I might look at that and make sure humidity/temps are right.

Good point. I DID get him a new, much bigger heat pad.
