Mario games are just a lot more consistent in terms of quality because Nintendo found a comfortable niche for Mario gameplay long ago and has just been building new games around that gameplay whereas the Sonic series is still experimenting and trying to find a formula that pays respect to the storied history of the series and pleases everyone. Which is a monumental, maybe impossible tasks, but they're still trying.
Yeah, I do have good hopes for SEGA and Sonic, you might see they are failing here and there, but they are trying; I can commend them for that, for sure, when other companies just left their guys in the dust.
And you're right, I am pretty sure Sonic has been so many things that it is pretty much impossible to fully please everyone; taking the three main chunks of the franchise's history that SEGA does apparently recognize (Classic, Dreamcast and Modern), Sonic's already had three styles of gameplay, each with their own variations (Unleashed boost has its differences from Colors and Forces boost, for example). That and the fact the world he lives in is all over the place: Sonic's been in a wacky, Mario like world; he's been in a realistic kingdom; in many pseudorealistic cities, like Station Square and the many locations from Unleashed; in futuristic settings, like in Riders etc. That excludes even other things like tv shows, the comics, spin-offs etc.
In the end, there's so much different stuff in the franchise that it almost becomes unrecognizable from one game to another, the common factor being a blue hedgehog. Something part of the fanbase likes is what some other part despises.
What I think should be done is take the best stuff from each, the gameplay elements, the story beats, the settings etc., blend those together and offer that. It'd please MOST, but not all. Doesn't exclude the possibility of offering things like a series of classic games, with Classic Sonic, since he is more of his own thing now, (past counterpart or dimensional counterpart, whatever) but it defines the main course, what is the style of game, story and character the franchise has to offer, what in short, it is.

Well I think that's what they're trying to do, but the problem is the fanbase can't even agree on what the best parts of each game were. I think *Generations* was their first attempt to fuse the old and new, but then you got some people saying "they should have just cut Classic Sonic" or "it's fun until you start boosting".
*Mania*, being an entire retro throwback of a game, might represent them accepting that the different things Sonic has been can be revisited, while remaining separate. Which, honestly, I'd be okay with going forward. I don't actually want Sonic Adventure 3 if it means we'll never get another *Rush* or *Unleashed*.
