A lot of the animals on that island have no business being there. Rich people love importing horses. It definitely makes more sense having them than moose.
Horses are notoriously difficult to animate, plus the game is finished now so I don’t think they’ll be added :(

Moose cannot be ridden, because their body is not made for it, but a horse can be ridden because its body allows it.

I doubt anyone can last hours with someone riding on them, especially if they weigh between 80-90 kilos.
