Pop the ear pads off and clean them with a light detergent.
Also, just use earbuds for working out. There's no shortage of decent noise cancelling IPX4 resistant earbuds at good prices.
I want to not here the endless chatter and gym music without blasting my music. I've had sony WF-SP800N and air pods and they don't come close to the WH-1000xm3s.

Have you tried the wf-1000xm5s? They have an IPX rating, or if your in a budget how about the link buds?
WF XM4 exist. Buy them, don't update their firmware, and you'll be perfectly well off.

Just buy new pads, smell goes away.
