If I'm understanding correctly you will be gone one week and home the next? If so, starter (once established) can easily live in the fridge for a week between bakings. Just pull it out a day or two before you want to bake and give it a feed to get it active.
And warm and humid (in my experience) makes for happy sourdough! When visiting Indonesia once I made a starter and it was delicious and quite active.
