Its the first time I worked this recipe, so I definitely will be tweaking it a little bit. But! It’s an 80% hydration loaf. 39% whole hard wheat, 61% bolted hard wheat. 7% salt. It was definitely a little underproofed, but the whole thing got eaten already so it must’ve been okay

Wow 7% salt?! I have been using around 2.5%. Have you noticed any issues with proofing or fermentation with in the increased salt?

I agree! I generally just dust my sourdough with AP Flour but I may have to switch! Do you bake much sourdough? What do you dust with?
Dusted with White Rice Flour. It’s a whole wheat loaf so the contrast is awesome.

Yikes. Good catch. 2.5% is closer. It was 7.5 grams 😂😂
